Soy Milk Porridge

Ingredients

Chicken Thigh 100 g
Green Onion 2
Cooked Japanese Rice 200 g
Water 3/4 cup
Chicken Stock Powder 1 tsp
Soy Milk 1/2 cup
Egg 1

Directions

  • Step 1

    Cut the chicken thighs into 2 cm bite-sized pieces.

  • Step 2

    Cut the green onions into thin small pieces.

  • Step 3

    Wash the rice in a colander.

  • Step 4

    Put water and chicken stock powder into a pot and bring it to a boil.

  • Step 5

    Add chicken and simmer for 2 to 3 mins, then remove scum.

  • Step 6

    Add soy milk and bring to a boil.

  • Step 7

    Add rice, stir gently to loosen, remove scum, and simmer over low heat for 1 to 2 mins.

  • Step 8

    Pour in the beaten egg and turn off the heat. Then give it a stir.

  • Step 9

    Place in a bowl, and sprinkle with green onion.
