Shibazuke Fried Rice

Enjoy a simple Japanese fried rice, brightened by the tangy bite and vibrant colour of shibazuke. It is quick to prepare, with a light and well-balanced flavour that adds a refreshing contrast to the warmth of the rice.

Ingredients

Cooked Japanese Rice 1 bowl
Finely Chopped Shibazuke Pickles 1 small pack
Egg 1
Chopped Spring Onion Adequate Amount
Salt Adequate Amount
Pepper Adequate Amount
Sesame Oil Adequate Amount

Directions

  • Step 1

    Heat a frying pan over a medium heat, add a little sesame oil, then crack in the egg.

  • Step 2

    Once the egg is just set around the edges, add the cooked rice.
    Stir well, breaking up the rice so that the egg coats the rice evenly.

  • Step 3

    When the rice becomes light and fluffy, season with salt and pepper, add the spring onion and chopped shibazuke, then stir-fry briefly until evenly combined.
