Hotate Takikomi Gohan

Japanese Rice | 5 cups |

Frozen Scallops | 400 g |
Shio Konbu (Salted Kelp) | 40 g |
Sake (Japanese Rice Wine) | 2 tsp |
Mirin (Sweet Cooking Rice Wine) | 1 tbsp |
Soy Sauce | 2 tbsp |
Chopped Ginger (Old Ginger) for Cooking | 15 g |
Chopped Ginger (Old Ginger) for Garnishing | 15 g |
Directions

Step 1
Wash rice and soak for 30 mins.

Step 2
Place the washed rice in the pot and add frozen scallops. Thereafter, pour sake and mirin evenly into the pot. Add ginger and Shio konbu. Add water and adjust the water level to the corresponding scale (5 cups) on the inside of the pot. Add soy sauce.

Step 3
Cook/Steam the rice in quick cook mode.

Step 4
When cooking is completed, stir the rice well with a rice scoop, breaking up the scallops.

Garnish with ginger.
