Ankake Tofu Chawanmushi

Sugar | 1/2 tsp |

Ankake (Thick Starchy Sauce)
4 Times Concentrated Men-tsuyu (Noodle Soup Base) | 1 1/2 tbsp |

Water | 150 ml |
Cornstarch Slurry | Cornstarch / 2 tsp, Water / 1 tbsp |
Chopped Green Onions | Adequate Amount |
Directions

Step 1
Put the tofu (160 g) in a bowl and mash.

Add 2 eggs, men-tsuyu (2 tsp), sugar (1/2 tsp), salt (small amount) and pepper (small amount) and mix until smooth.

Cover the bowl with a layer of plastic wrap and pour in the tofu mixture.

Cover it with a fluffy layer of plastic wrap. Put in microwave and heat for 6 mins (440 W).

Now make the ankake (thick starchy sauce). Mix men-tsuyu (1 1/2 tbsp), sugar (1/2 tsp) and water (150 ml) in a heatproof bowl. Place in microwave (without wrapping) and heat for 4 mins (800 W).

Add cornstarch slurry while stirring. Place in microwave (without wrapping) and heat in microwave for 1 min (800 W).

Step 7
Turn over the chawanmushi and serve in a bowl.

Pour the ankake over the chawanmushi, sprinkle with small pieces of green onion, and enjoy!
